Strawberry Citrus Cheesecake Salad
Is it super cheesy that I’m so into these national food holidays
? I suppose I’m alright with being cheesy. So in honor of cheese…and National Strawberry Day…
5 oz baby spring mix
1 1/2 cups strawberries, sliced
3 oz raw goat cheddar, shredded
3 meyer lemons, juiced
3-4 droppers NuNaturals Vanilla Stevia Liquid
sea salt and pepper, to taste (optional)
minced raw garlic (completely optional. I have weird taste buds)
Toss and have salad for dessert!

Today’s post might be TMI. I have noticed however, in detox circles, people are up for talking about pretty much anything body-related. So here we go: (I apologize to any of the men-folk reading ;)) It’s Rose Cleanse day 26 and I started my period yesterday. I usually get quite weepy a good WEEK before I start my period and spend the first day enduring (usually fairly mild) cramps. I always notice that when I eat cleaner, everything just runs so much more smoothly (and vice-versa) and this month is no exception. My experience so far has been ONE DAY of feeling extra emotional, followed by a few minutes (literally) of cramping. I kind of laughed. It’s really been pretty uneventful and I’d like to keep it that way! Alright, over-sharing time complete. Let’s eat.
1 large cucumber
2 roma tomatoes
2 oz raw goat feta
small handful chives
1 Tbsp Herbs De Provence
1-2 cloves raw garlic
romaine, or your favorite lettuce leaves for wrapping
lots of fresh lemon juice and NuNaturals stevia
Dice cucumber and tomato (remove seeds if you wish) and place in a medium-sized bowl. Crumble feta, chop chives, mince garlic and add. Season with Herbs De Provence and dress with lots of lemon juice and stevia. Mix and wrap in your favorite lettuce leaf.
I ate this with a side of roasted beets and a bar of Hibiscus&Ginger Raw Organic Chocolate from a great company called Fearless.
