Molten Chocolate Beet LoveCakes


Here is a decadent treat to share with your Valentine if your Valentine, unlike mine, is crazy about beets. I am crazy for beets and crazy for these cupcakes. Mostly though, I’m crazy for my Valentine. Therefore, I will not actually be serving these on February 14th. I do plan on making something equally as delicious that we will both love but for now, here’s one for the beet-lovers!

Ingredients:

3 oz. 70% dark chocolate (plus some chunks for stuffing)
3 Tbsp organic butter
2 Tbsp NuNaturals Baking Stevia
1 free-range egg
1 cup cooked beet puree
2 Tbsp cocoa powder
1/2 tsp vanilla or orange extract (or 1/4 tsp of each)
pinch sea salt
cupcake liners

Preheat oven to 350. Melt butter and chocolate together in a small pan over low heat. Once completely melted, remove from heat and add remaining ingredients. Mix together and pour into cupcake liners. Place a chunk of chocolate into the center of each cup of cupcake batter. Bake for 20-25 minutes. Eat while still warm!

Now that the cleanse is over and I’m full swing back into “normal” life, I thought I’d share what life looks like post-cleanse:

It looks pretty much exactly the same.

Except for a couple glasses of wine, I’ve done nothing differently. While I’m not interested in adding any density to my day (juicing ’til dinner is so working right now), a little variety might be in order pretty soon here. Sunbutter Stir Fry– here I come!

A couple other things to look forward to:

1. A sweet treat for Valentines Day: Molten Chocolate Beet Cupcakes. Stay tuned for the yumminess.

2. I just registered for Natalia Rose’s Advanced Detox Certification Training and could not be more excited. It isn’t until June, I just couldn’t wait to share!

And finally…the food!

These are the perfect salad topper for a delicious bowl of greens and avocado.

Ingredients:

1 sweet potato
1 Tbsp organic butter or coconut oil
1 tsp dried sage
sea salt, pepper, stevia, and red pepper flakes

Preheat oven to 450. Dice sweet potato into crouton size bites. Melt butter or oil and toss with sweet potatoes and spices. Bake for 15 to 20 minutes.

Sweet & Salty Fennel Fries

Sweet and salty…crispy and chewy…absolutely delcious ๐Ÿ™‚ I ate these hot from the airplane oven and tossed with a salad of fresh greens, soft sheep cheese, sun dried tomatoes, and a lemon-stevia dressing.

Ingredients for Tasty Fennel Fries:

2 bulbs fresh fennel
1/2 Tbsp organic butter
sea salt and stevia

Preheat oven to 350. Remove stems from the fennel and pull apart the layers, cutting into fry or chip-like sizes. Melt butter and coat fennel pieces, sprinkling with salt and stevia. Place in a single layer on baking trays and bake for 45-60 minutes.

Cinnamon Toast Brussel Sprouts

I read an absolutely fantastic post today from Jenny Sansouci of Healthy Crush. It was titled titled Lessons from a Juice Cleanse and I highly recommend reading all of the posts from her recent 10 day juice fast- even if just for the recipes :D. I felt myself nodding excitedly at her list of “lessons”, and I’m not even doing a full on fast! My top 5 most relatable favorites:

*Overeating kills creativity.

*A clean body = a clear mind.

*Cleaning the juicer is a less-than-fun activity. Music and singing helps.

*My body feels much better on less food.

*Depressing moods arenโ€™t permanent. Neither are ecstatically blissful ones.

I’ve been feeling especially clear and creative this week, it’s a lot of fun reading similar experiences!

You know what else is fun? Eating freakishly delicious brussel sprouts. My ladyfriend gets the credit for naming this one- they really are reminiscent of cinnamon toast!

Baby Greens+Raw Pecorino+Red Thai Curry Paste=The Win.

Pre-sprout-goodness we had a salad that also happened to fall into the “freakishly delicious” category. Crunchy baby greens tossed with shredded raw sheep pecorino and a big smear of Red Thai Curry Paste. A salad must-try if you ask me.

Ingredients:

4 cups stemmed and halved brussel sprouts
1 Tbsp organic butter
1-2 droppers liquid stevia
big pinch black pepper
1/4 tsp sea salt
cinnamon

Preheat oven to 400. Melt butter rub into brussel sprouts. Add stevia, salt, pepper, and a generous sprinkling of cinnamon. Bake for 30 minutes.

Who knew brussel sprouts could be dessert?!

Rosemary and Black Pepper Sweet Potato Rounds


My go-to dishes when I’m feeding other people are as follows: sweet potato fries and a huge avocado salad. Almost every time it is some variation on this. Why mess with a good thing? This afternoon I met a bunch of Britneys co-workers for the first time at a potluck where I brought the above mentioned items. Sort of. I don’t know if I was looking for variety or if I just wasn’t motivated enough to chop those suckers into skinny fry shapes but these are what I ended up with. And they were tasty. VERY tasty. I probably shouldn’t say this but I may have liked my dish better than any of the other dishes at the event. Unfortunately this means I probably ate half of them and deprived many remaining guests of their sweet and salty deliciousness.

Ingredients:

sweet potatoes, peeled and chopped into half inch rounds
organic butter or coconut butter
fresh rosemary, minced
sea salt, freshly cracked black pepper, and nunaturals stevia, to taste

Preheat oven to 400. Melt the butter or coconut butter in a large dish and add the sweet potatoes, coating thoroughly. Add the rosemary and seasonings and toss again. Place in a single layer on baking sheets. Bake for 20 minutes, flip, and bake for another 20-25 minutes until they are soft and just getting crispy on the outside.

The salad was simple: chopped romaine, red peppers, cilantro, shallots, and avocado with a dressing of lemon, stevia, salt and pepper. The smiling bottle you see is red wine from our friend, the Trader Joe.

I’d love to hear other people’s healthy favorites when entertaining!
