What I Ate Wednesday

4 grapefruits and half a banana chopped up with vanilla stevia. Sorry for the lack of a real picture- I gobbled it all up before I remembered to snap a shot!

Zucchini noodles with marinara and Spiced Sweet Potatoes from The Fresh Energy Cookbook

I’ve noticed when I eat more fruit during the day I don’t have a much of desire to put away half to a whole big bar of chocolate during the evening. Tonight this little nibble of raw chocolate was just right.

Herbed Avocado and Hearts of Palm

Ingredients:

1 can sliced hearts of palm
1 ripe avocado, chopped
1 handful parsley, minced
1 clove garlic, minced
1/4 cup leeks, sliced
juice of one lime
salt and pepper

Toss and season to taste.

Carob Pumpkin Pie Green Smoothie

Alright so it’s not exactly green- the greens are hidden among the delicious flavors of carob and pumpkin pie!

Ingredients:

2 cups carrot juice
1 handful baby spinach
1 avocado
2 droppers NuNaturals Vanilla Stevia
2 Tbsp carob powder
1 tsp pumpkin pie spice

Blend until creamy.

A great review of Gaiam TV– I’ve been curious to try this myself!

I discovered that Oprah has a great selection of guided meditations.

Loved this particular entheos newsletter this week, especially this quote: “This process of returning to your natural genetic rhythm is not a thirty-day lose-weight, look-great-for-a-party-trick. A couple cups of Trader Joe’s Pumpkin Spice Herbal Tea

A couple cups of Green Lemonade 101 from my favorite new cookbook.

My Avocado Grapefruit Salad with Vanilla Bean and Sea Salt.

Dinner was Herbed Avocado and Hearts of Palm (recipe to come)tossed with spinach, mashed cauliflower and brussel sprouts. Recipe’s to Nourish provided the recipe for dessert: Black and White Marble Fudge.

Avocado and Grapefruit with Vanilla Bean and Sea Salt

Ingredients:

1 grapefruit
1 ripe avocado
sea salt
NuNaturals stevia
1 vanilla bean

Peel, section and chop grapefruit and place in a bowl. Chop avocado and add to grapefruit.
Sprinkle with a little sea salt, stevia, and the seeds from a vanilla bean.

“Warm Pumpkin Pie” Carrot Juice

Ingredients:

1 cup carrot juice
1 cup unsweetened nut milk
1 dropperful Nunaturals stevia
1 dropperful NuNaturals vanilla stevia
pinch of pumpkin pie spice

Bring nut milk to a boil in a small pot on the stove. Pour into a 16 oz mug, add stevia and pumpkin pie spice and stir. Add carrot juice and stir again.
